Hannah Completes Diving I

Last week Hannah completed Diving I. Of course, I always knew she loved diving; it became painfully clear when she began ignoring the "No Diving" signs posted around swimming pools we visited. She was incredibly happy, then, to take a class in which she needed do nothing besides work on her diving. (Unfortunately, I can't upload the movies. So, these are fuzzy "frame shots" of a few movies from last Thursday.)

The Case of the Broken Backyard Umbrella

Recently, Rich and I visited my parents and cooked dinner. (Our menu should be a different post.) While looking at the newly landscaped backyard; however, Rich noticed that the umbrella over the table appeared to have taken on that "broken-dandelion-stem" look. It was, in fact, quite windy that day, and the wind gusts cracked the mechanism that allows the umbrella to "tilt" to the side. Knowing that my mother would be upset, Rich brought the matter to my attention by saying, "Hey, is that a backyard umbrella, or did your parents get a satellite dish?" We managed (after 20 minutes) to disassemble the umbrella from it's post and the table so that it could be removed before my mother spotted the "dangling dandilion." We hoped this would help ease the "breaking news"; but, alas, my mother was still mourning her loss when we left on Sunday morning. Pesto Season is Upon Us

Most people could probably go through life without a pasta dryer, but we have discovered that processing a couple of pounds of pasta dough without the dryer results in a frustrating mess. Note how neat and tidy our pasta is.

Hannah Passes Level 5 Swimming

Hannah has been taking swimming lessons for the last couple of weeks. The purpose of the course is to work on different swimming strokes; however, Hannah's favorite part of the course was the extra time that she spent diving.

Manitowoc Day Trip

Deanna and I went to Manitowoc for a day during our recent trip to New Holstein. We walked around the marina area and checked out the lighthouse.

Deanna and I walked out to the Manitowoc lighthouse on a nice, clear day.

We climbed around the side of the lighthouse so that we could stand in front of it and look out at the lake. This probably wasn't the safest thing to do, but there was a handrail.

Vegetarian Minestrone Recipe Revision

We came up with this minestrone revision after a recent visit to our favorite little Italian lunch place, Il Ritrovo, in Sheboygan. This hearty minestrone has earned nods, compliments, and “killer, Mom,” comments from my pickiest diners, the girls.

2 lg. cans (49 oz. ea.) chicken broth
2 lg. jars (1 Qt. ea.) of Great Northern beans
1 bag carrots (2 lbs.) (chopped)
1 bag (5 lb.) lg. red potatoes (peeled and cubed)
5 cloves garlic (crushed)
4 T good olive oil
2 T Italian seasoning
1 t dried sage
1 t ground fennel
1 t dried parsley flakes
3 med. zucchini (chopped) or 3 med. yellow squash (chopped)
6 oz. bag baby spinach
freshly grated parmesan (2-3 T shredded to garnish each bowl of soup)

In a large soup pot, bring chicken stock and garlic to a boil, and cook carrots, potatoes, and beans for 15 to 20 minutes. When carrots and potatoes are done, food process ¼ of the soup stock and vegetables to a puree. Add the puree back to the stock pot and add olive oil, seasonings, zucchini, and spinach. Reduce heat and cook for about 5 minutes. Turn off heat, stir, and let sit for about 1 hour before serving. Salt and pepper to taste. Garnish with freshly grated parmesan cheese.
